I receive many inquiries around the New Year when friends and acquaintances are thinking of adding more vegan meals to their diet. What’s easy that I should pack for lunch? What easy dinners can we add to our rotation?
I was a vegetarian for 9 years before going full vegan in early 2013. I love to cook. I’m also a really busy person so while I’d love to make elegant and diverse meals on a regular basis, the truth is I still cook but it has to be quick.
So I thought I could share with you some of these vegan tips & tidbits. Easy. No exotic ingredients (at least I don’t think so). Simple stuff, that happens to be vegan. Acceptably good for you, mostly good for the planet, really good for animals.
